Quick Chopped Lunch Salad

Ingredients:

  • 1/4 cup delicatessen vinaigrette coleslaw
  • 2 tablespoons light mayonnaise
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon salt
  • 4 cups mixed baby salad greens
  • 2 slices (2 ounces each) spicy pepper delicatessen turkey, cut into cubes
  • 1 ounce low-fat swiss cheese, cut into small pieces
  • 1/2 cup frozen baby peas, thawed
  • 1/4 cup chopped baby carrots

*Serves 4

Directions

1.In a large bowl, combine the coleslaw, mayonnaise, pepper, and salt. Stir to mix well. Add the greens, turkey, cheese, peas, and carrots. Toss to coat all the ingredients with the dressing.
